Loki had a history of wanting to prove himself to be as good as Thor, worthy as much even thinking he had his tricks and ways with words instead of brutal strength, like is common in Asgard, but when he finds out that he is a frost giant, he just lost it. He had been growing up hearing how the Jotun are monsters, the enemies of Asgard and that his brother said of how he was going to beat them all, and suddenly, he's one of them, and Odin falls and he thinks he killed him by accident, not helping. He was lying to himself and trying to prove - even when there was no need - that he was a son of Odin, worthy as Thor of their love and even the throne if it came to that.
This of course is easier to get if you are into the comics, like me. But I do give you that the script was a little sloppy in those points, especially because they deleted several scenes that helped to get into Loki's character psyche (like you pointed out that would have helped) like when he tells Thor that no matter what he does he will always love him, and when Frigga gives him Gunir and the throne and he's just standing there looking like he wants to run and not have this upon him, among others.
To give you reassurance, yes, Loki's character in avengers is more consistent.
Also, I understand that you right now don't like him because he made Thor cry (admit it, that's the mayor problem you got with him right now, hahaha) a few of my friends at the movies said the same when we first watch it. I honestly was too busy trying to figure Loki, I got hooked with his character from the very beginning :P
