But the movie doesn't fully establish that he's 1) insane 2) operating on Blue-And-Orange-Morality or 3) establish that anyone else in Asgard or Jotunheim is operating on Blue-And-Orange-Morality. Loki starts out acting pretty logical, for a superpowerful magic demigod thingie that's lived for centuries at the very least ... and then in the middle of the movie he goes all ... muddled, and very limited explanation is given.
Think of it like a Shakespearean or Greek tragedy, if that helps you any? Loki's not 'insane-insane' he's pretty clearly not mentally well, though. he practically bleeds the need to be accepted and loved, but even if he already had that he's incapable of seeing it. It's only made worse by the realization that he's a frost giant and adopted.

Loki manipulated Thor into going to Jotenheim pretty clearly, he has a history of fucking with Thor, and Sif says that he's always been jealous of him. He does it because he hates Thor as much as he loves him.

There's logic. It's just Loki's Abandonment Issues Logic. 'I must show Dad that Thor shouldn't be king, I know, I'll let the Jotuns into Asgard! I'm a Jotun? suddenly dad not loving me as much as thor makes sense! Dad's in Odinsleep? I'll be the BEST KING EVER while he's away and kill all the stupid jotuns for him! Then he'll have to see my worth, right? Right?!"
