See, the problem is that you're trying to give Loki earth-logic. He does not earth-logic. The crazy is strong with him, and also if you believe what he says then he has mental issues from neglect if not abuse. But maybe you can't believe what he says, because he's LOKI, the god of LYING, and maybe he's lying TO HIMSELF.
Everything he does it to try to prove to Odin that he is a Worthy Son, and a Worthy King. Maybe at first he was just trolling, trying to prove that Thor wasn't ready to be king (and that Odin should maybe look at Loki for the role) but then once he find's out he's a frost giant he spirals into crazy town. Everything that Loki has ever believed - that Thor is loved more, etc - now has a REASON. And not to mention all the internalized racism he has against his own people. And so he has to kill the frost giant's once and for all so that he can finally get Odin's love like Thor has.
